Recipe: Wasabi Pea Crusted Shrimp with Gingered Carrots and Soy Butter

INGREDIENTS:

For the mashed potatoes:
Approx. 1 pound potatoes
3-4 tablespoons butter
1/4-1/3 cup milk (or more as needed)
salt and pepper to taste

20-24 large raw peeled shrimp
2-3 tablespoons vegetable oil for sauteing wasabi pea crusted shrimp

approx. 1 1/2 cups Japanese style wasabi peas (see procedure)
1 large egg (whisked with 1 - 2 Tbs water)
approx. 1/2 cup all-purpose flour

approx. 5 medium large carrots, peeled and cut into 1/2-inch slices
2 tablespoons finely minced peeled fresh ginger

3-4 tablespoons butter
2 tablespoons soy sauce

PROCEDURE:

Peel and cube as many potatoes as you like and get those going in a pot of water on the stovetop.

While that's happening, peel and finely mince a couple of tablespoons of fresh ginger and peel and slice as many carrots as you like into long 1/2-inch thick slices.

Add the carrots and ginger to a saute pan with about 1/2-inch water and put a lid on top.

Next, use a food processor to coarsely grind about 1 1/2 cups (before grinding) of wasabi peas and add those to a large shallow bowl. Then dredge the large raw peeled shrimp first in a little all-purpose flour, then in a beaten egg and finally, in the ground wasabi peas, placing the shrimp onto a clean plate as you go.

Drain the potatoes when they're done and mash those with a little butter, milk and salt and pepper and keep them warm.

Turn the heat to high underneath the carrots and, once that comes to a boil, add a splash of vegetable oil to a large nonstick saute pan on medium high heat and saute the shrimp on both sides until they're cooked to your liking.

Use the lid to help strain and drain the carrots and ginger really well and, once the shrimp are cooked to your liking, divide everything up onto individual plates.

Then add 2-3 tablespoons of butter to the empty shrimp saute pan and add a little splash of soy sauce and let that come together and spoon it onto the plate to finish.

HINTS:

Add the soy and butter to the drained cooked carrots instead of making a separate soy butter.

You can find wasabi peas in Asian markets or in the specialty or international aisle of larger super markets.
